CHEM 6007 - The Chemistry and Art of Food Science Credits: 3 Students will explore the science underpinning food preparation, including calorimetry, chemical and physical properties of edible molecules, metabolism, and the role that recipe components have of the final culinary preparation. The artistic and aesthetic aspects of food preparation will also be explored.
